Ethical Spirits K.K. (Taito-ku, Tokyo) is a distilling venture that creates new-age gin and whiskey.

The LAST series of ethical spirits is made from reused sake lees distilled by the Chiyomusubi Sake Brewery, which has a long history in Tottori Prefecture.

The first product in the LAST series, “MODEST” is a craft gin that maximizes the potential of sakekasu by using six botanicals (medicinal and aromatic herbs). The freshness derived from sakekasu is supported by the aroma of ginger and juniper berries, creating a gin that is easy to drink while still having a robust flavor.
